
Mom’s Derby Pie

As anyone born and raised in Louisville, Kentucky can tell you, the two things that we pretty much all love are the Kentucky Derby and bourbon. And while the Derby is run on the first Saturday in May, Mom’s Derby Pie, like bourbon, is perfect all year around. For as long as I can remember, my mom, Jeanne, has always been the one to bring the Derby Pie at Thanksgiving, The taste is so rich that you just about can’t finish a slice. Chocolate. Pecans. Ingredients
Pie
- 2 eggs
- 1 egg yolk
- 1/2 cup sugar
- 1/2 cup dark brown sugar
- 1 cup pecans broken into halves and roasted
- 3/4 cup chocolate chips
- 1/8 cup flour
- 1 stick butter melted
- 2 teaspoons vanilla extract
- 1 tablespoon molasses
- 1/8 cup maple syrup maybe more
- 1/4 cup buffalo trace bourbon
Homemade Bourbon-Spiked Whipped Cream
- 1/2 cup whip cream heavy
- 1/4 teaspoon vanilla extract
- 1 1/2 tablespoon sugar
- 1 tablespoon bourbon

Instructions
Pie
- Mix sugars with the eggs, whisk until fluffy.
- Add all the rest of the ingredients and mix together.
- Pour into pie shell and bake at 350 degrees for 30-35 minutes.
Homemade Bourbon-Spiked Whipped Cream
- Mix all ingredients in a bowl with an electric mixer until fluffy, about 3-5 minutes.
