Sweet Potato Casserole with Pecan Glaze

In my family, we have plenty of generation-to-generation traditions, but we do like to introduce new ideas to keep our family gatherings interesting. Asking the “what food can I bring?” question used to terrify me, as I am not a great cook or baker. One day, I started to experiment with my favorite holiday side dish, the Sweet Potato Casserole.

Sweet Potato Casserole with Pecan Glaze

Casserole
  • 6 cups mashed sweet potatoes cooled
  • 2 cups brown sugar packed
  • 4 large eggs lightly beaten
  • 2 teaspoon vanilla
  • 2 cups milk 2% or skim
  • 2 cups melted butter
Pecan Glaze Topping
  • 2 cups chopped pecans
  • 1/2 cups brown sugar
  • 1/3 cups flour
  • 1/3 cups melted butter

  • 6 cups mashed sweet potatoes cooled
  • 2 cups brown sugar packed
  • 4 large eggs lightly beaten
  • 2 teaspoon vanilla
  • 2 cups milk 2% or skim
  • 2 cups melted butter
Pecan Glaze Topping
  • 2 cups chopped pecans
  • 1/2 cups brown sugar
  • 1/3 cups flour
  • 1/3 cups melted butter
Instructions
  1. Heat the oven to 350 F. Butter a 3-quart casserole or baking dish. In a large mixing bowl, combine the 6 cups mashed sweet potatoes, 2 cups brown sugar, 4 eggs (lightly beat before adding), 2 teaspoons of vanilla, 2 cups of milk and the 2 cups of melted butter. Blend thoroughly using a mixer. Spoon the blended mixture into the prepared baking dish.
  2. To prepare the Pecan Glaze Topping, use a separate mixing bowl (can be small). Combine ½ cup brown sugar, 1/3 cup of flour, 1/3 cup of melted butter and blend well. This glaze mixture should be thick but easy to pour. To thin the mixture out, add a splash of milk.
  3. Slowly pour the glaze evenly on top of the casserole. Use an icing spatula or knife to carefully spread the glaze to cover the entire casserole. Cover the entire casserole with sliced pecans.
  4. Bake the casserole for 35-40 minutes until the casserole filling is hot and the topping has browned.
