Mushroom Orzo

This recipe is special to me because this is the first dinner that my husband, James, cooked for me when we started dating. I remember being impressed because it was a dish that I have never tried cooking before. Since then, I have cooked it myself plenty of times but the smell and taste always brings back good memories. This dish pairs well with both meat and seafood- It is delicious!

Ingredients
  • 1/2 cup butter divided
  • 1/2 cup yellow onions chopped
  • 1 cup orzo pasta uncooked
  • 1/2 cup fresh shitake mushrooms sliced
  • 1 cup water
  • 1/2 cup white wine dry
  • garlic powder to taste
  • salt & pepper to taste
  • 1/2 cup Parmesan cheese grated

  • 1/2 cup white wine dry
  • garlic powder to taste
  • salt & pepper to taste
  • 1/2 cup Parmesan cheese grated
Instructions
  1. Melt 1/2 the butter in a skillet over medium heat. Stir in the onions, and cook until golden brown. Mix in orzo, mushrooms, and remaining butter. Cook and stir 5 minutes, until butter is melted and mushrooms are tender
  2. Pour water and wine into the skillet, and bring to a boil. Reduce heat to low. Season with garlic powder, salt, and pepper. Cook 7 to 10 minutes, until orzo is al dente.
  3. Stir in the Parmesan cheese and parsley to serve.
