Pumpkin Cookies

Our family is starting a new tradition for the next generation.  The day before Thanksgiving the cousins bake the Pumpkin cookies for the family to snack on during the Thanksgiving break!

Cookies
  • 1 cup margarine or butter
  • 1 cup sugar
  • 1 egg
  • 1 cup pumpkin
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/8 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cloves
Frosting
  • 3 tablespoons margarine
  • 1/4 cup milk
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1 box powdered sugar

  • 1 cup margarine or butter
  • 1 cup sugar
  • 1 egg
  • 1 cup pumpkin

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/8 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cloves
Frosting
  • 3 tablespoons margarine
  • 1/4 cup milk
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1 box powdered sugar
Instructions
Cookies
  1. Cream margarine and sugar, add egg, pumpkin and vanilla, beat on high for 2 mins.
  2. Combine flour, soda, powder, ginger, salt, ground cloves add to mixture. Drop by spoon fulls.
  3. Bake at 350 for 10-12 minutes.
Frosting
  1. Melt on low. Add one box of powdered sugar.
