Forgotten Cookies

Passed to your plate by Emily Hamilton

A favorite of my brothers and I growing up, these cookies seemed like magic to us. We would put them in the (turned off) oven on Christmas Eve – just globs of egg white and the next morning we would open to find the most delicious light and airy chocolate treats!

  • 2 egg whites room temperature
  • 2/3 cup sugar
  • 1 pinch salt
  • 1 teaspoon vanilla
  • 1 cup pecans
  • 1 cup semi- sweet chocolate chip

  • 2 egg whites room temperature
  • 2/3 cup sugar

Instructions
  1. Preheat oven to 350 degrees.
  2. Beat egg whites until almost stiff.
  3. Gradually add sugar and beat until egg whites are stuff.
  4. Mix in salt and vanilla.
  5. Fold in pecans and chocolate chips.
  6. Drop by teaspoonful’s onto greased, foil-covered cookie sheet.
  7. Place cookies in oven and immediately turn off oven.
  8. Leave cookies in closed oven all night.
