Mom’s Lasagna

My mom has made this recipe since I can remember, and nothing says Christmas dinner like this lasagna to me. Christmas dinner would not be Christmas dinner without it. The great thing about it is, we are not Italian, it’s probably nowhere near a traditional lasagna, but we have modified it over the years to be “perfect to us”. Ingredients
Meat Mixture
  • 1 1/2 lbs ground beef
  • 1 clove garlic mined or 1/2 tsp. garlic powder
  • 1 tablespoon basil
  • 1 can diced tomatoes 16 oz. can
  • 1 1/2 teaspoon salt
  • 2 cans tomato paste 6 oz. cans
Cheese Mixture
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups small-curd cottage cheese reduced fat
  • 1/2 cup Parmesan cheese grated
  • 2 tablespoons parsley flakes
  • 1/2 teaspoon pepper
  • 2 eggs beaten
Lasagna Noodles
  • 8-10 strips of lasagna noodles
  • 12-15 slices of farmer's cheese for on top/between cheese mixture layers
  • 13x19x2 pan or smaller square pan that is deeper for more layers
  • non-stick foil

Instructions
To Prepare Meat Mixture
  1. Brown meat slowly, spoon off excess fat. Add remaining meat mixture ingredients. Simmer uncovered for 30 minutes.
While Meat is Simmering
  1. Cook noodles in salted water, drain and rinse. Prepare the cheese mixture; combine all ingredients.
To Assemble
  1. Layer the lasagna as follows: Start by placing ½ the meat mixture on the bottom to prevent sticking. Layer ½ the noodles to cover the meat, add ½ the cheese mixture on top of the noodles and add a layer of sliced cheese across the top. From here, repeat all layers. (2 assembled layers total).
  2. Bake at 375 degrees, approximately 30 minutes. Once cheese layer on top starts to brown to your liking, cover with non-stick foil if cooking is not complete.
