New Year’s Sausage & Sauerkraut Balls

It’s a long standing tradition in Germany that eating sauerkraut will bring blessings and wealth for the New Year. My Great Aunt Marilyn crafted this very simple recipe to celebrate her heritage and have “a bite to good fortune” in the New Year. While my family has always eaten these on New Year’s Day, I have also found them to be a popular hit for tailgating parties as well. Ingredients
  • 2 rolls sage sausage 16 oz rolls; Bob Evans or other
  • 1 can sauerkraut 16 oz. can; drained and chopped
  • 1 egg beaten
  • 1-1 1/4 cups quick oats
  • 3 tablespoons brown sugar packed
Prep Time 10 minutes
Cook Time 25 minutes

Ingredients
  • 2 rolls sage sausage 16 oz rolls; Bob Evans or other
  • 1 can sauerkraut 16 oz. can; drained and chopped
  • 1 egg beaten
  • 1-1 1/4 cups quick oats
  • 3 tablespoons brown sugar packed
Instructions
  1. Preheat oven to 375 degrees.
  2. Mix and roll all ingredients into 1” balls.
  3. Bake 20-25 minutes; turn after 10 minutes.
  4. Serve immediately.
