Bleu & Walnut Cheese Ball

We found this recipe on our creative fuel blog written by Kate Kreimer more than 6 years ago. Kate raves about this cheese ball and calls it a decedent example  of cheeseball renaissance. Funny thing is this is not Kate’s recipe at all! It’s our very own Liz Price’s. Do you remember Kate stealing your glory Liz?

Ingredients
  • 4 oz. cream cheese softened
  • 1/3 cup sour cream
  • 6-8 oz. blue cheese crumbled
  • 1/8 tsp. cardamom
  • salt & pepper to taste
  • 1/2 cup walnuts toasted and chopped
  • 1/2 cup apples peeled and finely chopped

  • 4 oz. cream cheese softened
  • 1/3 cup sour cream
  • 6-8 oz. blue cheese crumbled
  • 1/8 tsp. cardamom
  • salt & pepper to taste
  • 1/2 cup walnuts toasted and chopped
  • 1/2 cup apples peeled and finely chopped
Instructions

  1. Combine cream cheese with sour cream and beat well.
  2. Stir in cardamom, salt and pepper.
  3. Add bleu cheese and mix.
  4. Add remaining ingredients and mix well.
  5. Pack into a plastic wrap line bowl or mold.
  6. Cover and chill over night or at least 8 hours until very firm.
  7. Serve with baguette slices, water crackers or focaccia and some sliced apples.
TIPS! a must do
  1. Use 2 oz. of a very strong bleu and 4 oz. of one not quite so potent.
  2. Before toasting the walnuts, toss the nuts with a bit of olive oil and a pinch of cumin and cardamom.
