Chocolate Crinkle Cookie

Every year my mom, my sister and I get together to bake holiday cookies. Now my two nieces even join the fun. It has become one of my favorite holiday traditions! We have matching Christmas aprons, listen to Christmas music and make the night as festive as possible. We make several types of cookies, but the Chocolate Crinkle Cookies are definitely my favorite!

Ingredients
  • 1/2 cup vegetable oil
  • 4 squares unsweetened chocolate (4 oz) melted
  • 2 cups sugar
  • 4 eggs
  • 2 tsp vanilla
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • confectioner's sugar

Instructions
Dough Preperation
  1. mix chocolate and sugar
  2. blend in eggs one at a time
  3. stir in flour, baking powder and salt
  4. chill mixture for several hours or overnight
Baking
  1. pre-heat oven to 350 degrees
  2. roll dough into teaspoonful single balls and roll in confectioners' sugar
  3. place 2" apart on greased baking sheets
  4. bake 10-12 minutes, be careful not to over bake!
