Sweet Potato S’Mores

This year I was meeting my future sister-in-law for the first time … the top item on the menu was SWEET POTATO. The pressure was on, for a few days my mom and I rattled off recipes to each other. An hour before dinner we decide to tackle this stacked, savory recipe, but we didn’t have half the ingredients to make it. Oops! In getting to our new guest (who is a racer and sweet tooth baker), we had to do a quick shift and improvise. Always a good reason to have some marshmallows in the house … the end product were these delicious sweet potato s’mores.

Ingredients
  • 3-4 sweet potatoes peeled and sliced 1/4" thick
  • 1-2 apples sliced 1/4" thick
  • 1/2 cup brown sugar
  • 2 tbsp. cinnamon
  • 1 tsp. nutmeg
  • 1/4 tsp salt if using unsalted butter
  • 1/4 cup marshmallows
  • soft butter
  • cooking spray

  • 3-4 sweet potatoes peeled and sliced 1/4" thick
  • 1-2 apples sliced 1/4" thick
  • 1/2 cup brown sugar
  • 2 tbsp. cinnamon
  • 1 tsp. nutmeg
  • 1/4 tsp salt if using unsalted butter
  • 1/4 cup marshmallows
  • soft butter
  • cooking spray
Instructions
  1. Heat oven to 350 degrees.
  2. In a bowl mix cinnamon, salt and nutmeg.
  3. Using a muffin pan, spray some cooking oil or use butter .
  4. Place a couple of layers of the sweet potato and sprinkle spice mix, smear of butter, some marshmallows into the tins.
  5. Alternate layers with a layer of apples, butter and spice mix.
  6. Top it with a layer of sweet potatoes, spice mix, smear of butter and some marshmallows.
  7. Place it in the oven with loose foil for 25-30 minutes.
  8. Till a knife through the sweet potatoes.
  9. Take off the foil to broil the marshmallows to golden brown.
