Ingredients
Meat Mixture
  • 1 1/2 lbs ground beef
  • 1clove garlicmined or 1/2 tsp. garlic powder
  • 1tablespoon basil
  • 1can diced tomatoes16 oz. can
  • 1 1/2teaspoon salt
  • 2cans tomato paste6 oz. cans
Cheese Mixture
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups small-curd cottage cheesereduced fat
  • 1/2cup Parmesan cheesegrated
  • 2tablespoons parsley flakes
  • 1/2teaspoon pepper
  • 2 eggsbeaten
Lasagna Noodles
  • 8-10strips of lasagna noodles
  • 12-15slices of farmer’s cheesefor on top/between cheese mixture layers
  • 13x19x2 panor smaller square pan that is deeper for more layers
  • non-stick foil
Instructions
To Prepare Meat Mixture
  1. Brown meat slowly, spoon off excess fat. Add remaining meat mixture ingredients. Simmer uncovered for 30 minutes.
While Meat is Simmering
  1. Cook noodles in salted water, drain and rinse. Prepare the cheese mixture; combine all ingredients.
To Assemble
  1. Layer the lasagna as follows: Start by placing ½ the meat mixture on the bottom to prevent sticking. Layer ½ the noodles to cover the meat, add ½ the cheese mixture on top of the noodles and add a layer of sliced cheese across the top. From here, repeat all layers. (2 assembled layers total).
  2. Bake at 375 degrees, approximately 30 minutes. Once cheese layer on top starts to brown to your liking, cover with non-stick foil if cooking is not complete.
